Air France presents new dessert creations by Nina Métayer

15.04.2026, Since April 2026, renowned pastry chef Nina Métayer continues her collaboration with Air France. She has created a new collection of exquisite desserts, specifically developed for the Business Class on long-haul flights.


To enhance the French-inspired culinary experience on board the Business Class, Air France has entrusted the creation of their desserts to an extraordinary talent. Nina Métayer, voted the world’s best pastry chef in 2023, has been working with Air France since 2024. This successful collaboration will now continue: Métayer has created a selection of new delicacies that will be served on flights departing from Paris in the coming months.

Each of the creations has been specially designed for Air France. Two of them feature on the menu for the first time: a Raspberry-Coconut and a Lemon-Verbena slice. Nina Métayer emphasizes: “These desserts were conceived as part of the travel experience. I have developed rich yet light creations that take passengers on a sensory journey, capturing the charm of distant destinations.”

Nina Métayer enthuses: “The Raspberry- Coconut creation is a delightful combination of selected flavors, where creamy coconut mousse, fresh raspberry jam, and the delicate layer of white chocolate meet to create a subtle balance between indulgence and elegance.”

Régis Marcon, Chef of Air France's Business Class Régis Marcon, awarded three Michelin stars and winner of the Bocuse d’Or, is currently creating the Business Class menu for Air France’s long-haul flights from Paris. Inspired by nature and his home region of Auvergne-Rhône-Alpes, he offers exclusive dishes characterized by sophistication and authenticity.

For this refined Michelin-level cuisine, the chefs work with Servair and use fresh, regional, and seasonal products. As part of the airline's commitment to responsible catering, meat, poultry, dairy, and eggs for each menu are sourced from France. The fish is obtained from sustainable or French fisheries, and vegetarian options are available in all classes.

To counteract food waste, Air France offers Business Class passengers the option to select their main course up to 24 hours before the flight. This ensures the availability of preferred dishes while minimizing food waste on board.

About Nina Métayer Nina Métayer, one of the leading figures in French pastry, discovered her passion for baking at a young age during a stay in Puebla, Mexico.

She then honed her skills in places including Melbourne, Australia, and in renowned luxury hotels in Paris. She began her career in Paris at Le Meurice before moving to the five-star Hotel Raphael, where she created her first signature dessert, the 'exotic floating island'. She then joined Jean-François Piège's Grand Restaurant, which received two Michelin stars six months after opening. Subsequently, she took charge of the dessert menu at Café Pouchkine and based on this experience, founded her webshop Délicatisserie.com in 2020.

Her elegant and refined creations are distinguished by subtle flavors, with each taste and texture created with precision. Thanks to her creativity and high standards, she is one of the leading figures in the world of pastry and has received numerous awards in recognition of her talent and career. Today, she operates several bakeries and patisseries as well as a chocolatier in La Rochelle and Paris and has become a symbol of excellence in French pastry.
