17.10.2025, Head Chef Sascha Spring Named 'Discovery of the Year'. Centric Dining at Hotel Seepark Thun Awarded 16 GaultMillau Points for the First Time. Centric Dining at Hotel Seepark Thun evaluated by GaultMillau for the first time, receiving 16 points outright. Head Chef Sascha Spring (25) represents a culinary philosophy focused on product, taste, and craftsmanship. His ambitions are rewarded: Spring is honoured as the 'Discovery of the Year 2026'. Thus, the native of the Bernese Oberland, together with his team at Hotel Seepark, leaves a culinary mark on Lake Thun.

In Centric Dining, regional products meet Asian aromas, each course telling its own story. Whether dishes with Steffisburg potatoes, homemade bread, or a Carabinero – all surprise with depth, precision, and personal touch. Guests experience a direct dialogue with the kitchen: all team members bring the dishes to the table themselves, share backgrounds, and create an atmosphere that makes haute cuisine approachable. The stories behind the dishes sometimes go back to childhood and are memories that guests are invited to share.

"We place the product at the centre and tell its story with each course. For us, the guest is at the centre, whom we get to know through conversation and gladly offer insights into our craft. We engage with taste and guests on a personal level – that’s how we understand Centric Dining," explains Sascha Spring, Head Chef and GaultMillau's Discovery of the Year 2026 at Hotel Seepark Thun.

Pride runs high at Lake Thun over the accolade for their 25- year-old chef: "Starting with 16 GaultMillau points upon the first evaluation makes us very proud. The newly oriented gastronomy is on the right track, and we are pleased with this confirmation on the culinary map of the Bernese Oberland," appreciates Vincenzo Ciardo, General Manager Hotel Seepark Thun and discoverer of the culinary talent from the region, regarding the scoring.
