01.10.2025, Gstaad Palace names its newly redesigned restaurant 'Le Grand'. The name is simple, straightforward, and remains true to the restaurant's ro, which date back to 1913. With a carefully selected menu featuring 75 items, the new restaurant boasts a concept that catches the eye: traditional service à table, celebrated at only a few places, meets innovative Daily Menus filled with fresh ideas from young chefs in the brigade of Culinary Director Franz W. Faeh.


After the Gstaad Palace gave its largest of the total four restaurants an entirely new makeover for the summer season 2025, it now receives a new name: ‘Le Grand’. Simple, straightforward, and full of personality – very much in line with the style of the house. The name symbolically represents the grandeur – it is indeed the largest restaurant in the Gstaad Palace with up to 90 seats and an impressive menu of 75 dishes. ‘We included the entire team in the naming process. As a result, a variety of ideas emerged and we found the name ‘Le Grand’ that matches the identity of the Gstaad Palace and the design of the new restaurant. The name stands for our ambition to offer top-class gastronomy and hospitality’, underscores General Manager Andrea Scherz.

‘Le Grand’ combines tradition and innovation.

For the winter season 2025/26 starting on December 15, 2025, Gstaad Palace will present two completely revamped menus at ‘Le Grand’. In line with the look & feel of the restaurant, both the breakfast and the lunch & dinner menus come in high-quality material with refreshing colours and a pleasant feel. The dishes are meticulously sorted by language. Highlighted are those dishes prepared directly at the table, an art hardly found in gastronomy nowadays. ‘We consciously maintain this very time- and resource-intensive service form at ‘Le Grand’. On one hand, it’s a nod to the history of our house. On the other hand, the table preparation is a culinary complete experience that is highly appreciated by guests of all ages’, says Andrea Scherz.

High standards: much experience and product knowledge required.

The impressive craft of live table preparation requires practice. Therefore, various training sessions are conducted before every season’s opening. All courses are test-cooked and presented to the service and kitchen team. In addition, the Maître d’hôtel provides instructions on the service process. Celebrating dishes with fire and flair in front of an assembled company requires considerable know- how and a significant amount of experience.

Showtime for young talents too.

Culinary Director Franz W. Faeh and 1st Maître d’hôtel Andrea Buschini are responsible for the training of service and kitchen staff before each season. At the same time, they passionately take care of the young talents in the Gstaad Palace kitchen. The young chefs are encouraged and challenged, allowing them to actively participate in the creation of the Daily Menu. ‘Sometimes something emerges, sometimes not – it’s not a must. Definitely, a great dynamic evolves – sharing knowledge is a key pillar of our team spirit’, says Faeh. He and his sous-chef, Luca Gatti, provide specific tips for optimizing the Daily Menus and give them the final approval before they hit the stage at ‘Le Grand’ and capture the hearts of the guests.
