Featuring seasonal cuisine, new uniforms, and delightful rooftop moments, the establishment presents a newly curated gastronomic experience. Head Chef Tom Walter brings a unique twist to seasonal classics. The summer season will run until 1st November 2026.


A step into Miiro The Mansard Gstaad – and you are met with the mountain summer breeze. Fresh accents flow through the entire boutique hotel on the promenade in Gstaad, setting the pace: lighter, seasonal and consistently focused on enjoying the moment. This development is evident in the kitchen, the newly conceived breakfast concept, and on the rooftop terrace with creative drinks. The offering is complemented by seasonal elements such as the asparagus menu, which accompanies the 4-star hotel from the opening until mid-June.

Freshly Served: Tom’s Summer Menu

Under the mantra of seasonality, rising star Tom Walter has recomposed the summer menu. At its core are regional products, clear flavors, and a cuisine that gives summer the stage it deserves. Familiar dishes appear in a new light: “Rind im Schnee” becomes “Beef in the Green” – a beef tartare with ricotta cream, fresh herbs, and toast, consistently following the ideas of seasonality and origin. The homemade gnocchi are also reimagined seasonally: for the summer, they receive a lighter sauce with zucchini and spinach pesto – fresh and fitting for the season. “We consciously keep our menu seasonal – and interpret modern Swiss cuisine as it was originally intended: honest, focused on the here and now, with what nature provides,” says Walter.

The culinary offering is also complemented by a seasonal asparagus menu, served until mid-June. The focus is on asparagus – sourced from local Seeland farms – in various combinations: classically with hollandaise sauce, potatoes, or optionally with parmesan or additional sides such as schnitzel. Part of the gastronomic concept is also the all-day bistro menu, available both on the rooftop terrace and in the lounge & bar. Here too, the chef’s signature is noticeable: “Tom’s Special Fries” are served with a summer twist – accompanied by dip, herb cream, harissa mayo, chives, and crispy onions.

A New Breakfast Arrangement: À la Carte

The summer season also celebrates mornings anew: The Mansard bids farewell to the classic buffet, opting instead for an à la carte breakfast in the spirit of a more conscious approach to food. The new concept brings together international breakfast classics and alpine specialties on one table – from pancakes and hummus to a regionally inspired mountain breakfast with local products. The focus is on individuality, freshness, and a more conscious use of resources. The dishes are served on elegant tiered trays, which are a feast for the eyes. The service also follows trends: the new, casual-sporty uniforms of the team are part of the further developed overall concept and emphasize the fresh appearance of the establishment.

Poured Anew: Drinks with a View

On the only rooftop terrace in Gstaad, summer naturally appears in many facets in the glass. Bar Chef Nicolas Ulm expands the drink menu with creative signature drinks, including various interpretations of the espresso martini. “The espresso martini stands for energy and enjoyment simultaneously – like a breath of fresh Gstaad mountain air,” says Nicolas. As a fragrant counterpoint, fondue remains a staple in the summer season, because “it has to stink a bit,” says host Stefan Ludwig.
